Bamboo Sticky Rice (Com Lam) of Con Cuong, Viet Nam

Bamboo Sticky Rice

Khi lam cơm cũng cần phải khéo tay, giữ lửa sao cho ống lam không bị cháy và cơm trong ống được chín. Khi lam lửa phải to và thực hiện lam từ đáy ống lên, hoặc miệng ống xuống, tùy từng nơi khác nhau, và luôn trở ống đều tay để cơm lam chín đều và không bị sượng. Lam khi nào ống cháy xém, có mùi cơm nếp tỏa ra là dấu hiệu cơm đã chín.

Sticky rice – a simple dish carrying the distinctive flavor of the mountains. Sticky rice is cooked in a unique way, inside bamboo tubes, resulting in a fragrant, chewy, and delicious rice dish. Sticky rice is not merely a daily meal but is also deeply intertwined with the traditional culture of the Thai people. When a mother gives birth, she is often given sticky rice to boost her immunity and aid in recovery.

Ingredients Bamboo Sticky Rice 

  • Sticky rice: Opt for a fragrant, plump variety like sticky rice.
  • Bamboo or reed: Fresh bamboo or reed, not too old or too young, approximately 30cm long. 
  • Banana leaves: Used to seal the bamboo.
  • Fresh coconut water: (Optional)
  • Salt: A pinch to enhance the flavor.

Instructions Bamboo Sticky Rice 

  1. Prepare the bamboo: Select fresh bamboo, cut into 30cm lengths. Rinse the inside of the bamboo.
  2. Soak the rice: Rinse the sticky rice, soak in water for about 30 minutes until softened. Drain.
  3. Stuff the bamboo: Fill the bamboo with rice, leaving some space for the rice to expand while cooking.
  4. Add coconut water (optional): If desired, add a little fresh coconut water to the bamboo for a richer flavor.
  5. Seal the bamboo: Cover one end of the bamboo with a fresh banana leaf and tie it securely with a string.
  6. Roast the sticky rice:
  7. Direct roasting: Place the bamboo on hot coals, turning frequently for even cooking.

Serving 

Use a knife to remove the outer layer of bamboo. Scoop the sticky rice onto a plate with a spoon or chopsticks. Sticky rice is best served hot and can be enjoyed with grilled meat, grilled chicken, or fresh vegetables.
