Dried Bamboo Shoots from Western Nghe An, Viet Nam

Nghe An boasts a rich culinary heritage, and one of its most distinctive delicacies is dried bamboo shoots.

Anyone who has tasted dried bamboo shoots from Western Nghe An will undoubtedly remember its unique, crispy, and savory flavor. A product of the mountains, deeply rooted in the cultural traditions of the ethnic minority communities, dried bamboo shoots have become an indispensable part of many Vietnamese families’ meals, as well as a must-try for visitors exploring the region.

Bamboo shoots have become a specialty of the mountains. In Nghe An, particularly in the western districts of Quy Chau, Que Phong, Ky Son, Tuong Duong, and Con Cuong, numerous species are revered as local specialties.

Western Nghe An offers ideal conditions for processing bamboo shoots. These districts are home to vast areas of bamboo forests, providing an abundant supply of raw materials. Each year, locals harvest a portion of the bamboo shoots for fresh consumption and process the rest into dried bamboo shoots.

To achieve the desired golden color of the dried bamboo shoots, the water must be brought to a rolling boil before adding the shoots. Once the water boils, the entire basket of bamboo shoots is immersed and boiled for at least 30 minutes before being removed to dry. If the bamboo shoots are added to cold water, they will turn white, resulting in a subpar product.

For optimal quality and a beautiful golden color, it is best to sun-dry the bamboo shoots. On sunny days, processors use sheets of corrugated iron or bamboo mats to dry the shoots throughout the day.

Dried bamboo shoots are processed and dried in open areas near the forest, ensuring they are free from environmental contamination. On overcast days, locals resort to using drying kilns fueled by charcoal or rice husks.
